Vineyard and terroir
The grapes are selected white Muscat grown in the heart of the historic Asti area, which is particularly well suited to the variety. The vines stand in white sandy soils formed from marine sediments.
Vinification
The grapes are picked by hand and gently pressed whole. The must is held in a stainless-steel tank at -2 °C for natural filtration, then fermented slowly in an autoclave at a controlled temperature to preserve the juice's natural freshness. Fermentation is stopped when the alcohol reaches 5%. Some of the carbon dioxide produced during fermentation stays in the wine, giving a gentle, natural fizz. Before bottling the wine is microfiltered for clarity and purity and to prevent the yeast from fermenting further.

Suited to serving as a digestif, in cocktails, or with fruit or dessert.
Vintage notes
2025: winter and spring rains left enough moisture in the ground to prepare the vines for a long, hot summer. Together with plenty of sunshine and careful vineyard work, this gave grapes with fresh flavour and bright acidity. Harvest began on 21 August, about two weeks earlier than usual.
Label / history
The name Nivole means "Clouds" in Italian.
