Vineyard and terroir

San Giovanni comes from its namesake vineyard at Monte Vibiano, planted at 280–350 metres above sea level. The clay-calcareous ground contains a substantial proportion of skeletal material. Vines are trained to Guyot and spurred cordon at approximately 5,000 plants per hectare, and the fruit is harvested strictly by hand into boxes.

Grapes

The vineyard is a traditional complantation containing numerous red grape varieties accumulated over time. The resulting field blend changes with the character of each vintage; exact proportions for the current 2022 release are not specified.

Vinification

After harvest, the grapes are gently destemmed and pressed. Alcoholic fermentation proceeds in stainless-steel vessels with indigenous yeasts.

Ageing

The wine matures in barriques and tonneaux.

Tasting profile

Intense Morello-cherry and berry aromas are framed by liquorice and spice. The palate is engaging and finely textured yet structured, with considerable substance and depth.

Serving and pairing

Its broad food compatibility extends from traditional Umbrian cooking to creative and international dishes. Particularly suitable partners include pasta with meat or truffle sauces, soups, stews, grilled meat and aged cheeses.

The San Giovanni vineyard embodies the estate family's intention to preserve inherited viticultural traditions while exploring the potential of the local terroir. Its many interplanted varieties produce a dynamic red shaped by the conditions of each vintage.
