Vineyard and terroir
The fruit is grown in Sicilian vineyards at 400 m above sea level, on clay soils.
Vinification
The grapes are usually harvested in September, once they reach optimal ripeness. After destemming and crushing, maceration and controlled-temperature fermentation take place over 8–10 days. Malolactic fermentation follows in stainless-steel tanks, before stabilization, filtration and bottling.
