Vineyard and terroir
Ornellaia Bianco interprets the estate’s Bolgheri terroir through selected vineyard parcels, reflecting the local relationship between sunlight and the sea.
Grapes
100% Sauvignon Blanc.
Vinification
The grapes were picked by hand into 15 kg crates during the cool early-morning hours and immediately chilled at the cellar to preserve their aromatic character. After careful selection, the whole clusters underwent slow, gentle pressing with protection against oxidation. Static settling lasted approximately 24 hours. The must then fermented entirely in barrels at temperatures no higher than 20°C. The cellar used 225 L barriques, 320 L and 600 L tonneaux, and cigar-shaped barrels; 30% of the vessels were new and 70% used. Malolactic fermentation was prevented.
Ageing
Maturation continued for 10 months on the lees, with periodic bâtonnage throughout. The separate lots were then blended and lightly fined before bottling. A further 20 months of bottle maturation preceded release.

Tasting profile
The 2023 is bright light yellow with delicate green nuances. Its complex bouquet combines exotic fruit, grapefruit peel and peach blossom with restrained roasted-hazelnut notes that add depth. The palate is generous and dense, giving a rounded impression, while a fresh, savoury backbone maintains balance and tension. The persistent finish carries pronounced minerality.
Vintage notes
Bolgheri’s 2023 season was challenging, although conditions proved favourable at important stages. A mild winter with comparatively high temperatures and average rainfall prompted early vine development. Abundant spring rain replenished water reserves for summer but required meticulous vineyard work. Summer was hot without reaching extremes, and periodic rain mitigated water stress, supporting slow, even ripening and concentrated berries. Late-August rainfall and cool September nights encouraged aromatic complexity and preserved acidity, balancing power with elegance.

Created alongside the estate’s flagship red, Ornellaia Bianco offers a white interpretation of the Ornellaia estate and its Bolgheri setting.
