Vineyard and terroir
The fruit comes from selected plots within seven Barolo crus. Their differing soils, exposures and elevations contribute complementary expressions of the denomination. The finished wine is conceived as a harmonious, complex representation of the wider Barolo zone and of the Scavino family’s tradition of blending different crus.
Grapes
Nebbiolo.
Vinification
Each plot is vinified separately. The grapes are destemmed and lightly crushed, then macerated and fermented in temperature-controlled stainless-steel tanks with indigenous yeasts. Malolactic fermentation takes place in oak barrels. Tartaric stabilization occurs naturally during winter through exposure to low temperatures.
Ageing
The individual plots remain separate while ageing for 10 months in neutral French oak barrels and a further 12 months in large casks. The final blend is determined through another cellar selection of the plots that performed best in the vintage. The assembled wine then spends approximately one year in stainless steel and 10 months in bottle before release.
Label / history
This cuvée holds particular significance for the Scavino family and embodies its history and tradition of blending fruit from different Barolo crus.
