Vineyard and terroir
The vines grow in central Tuscany at 280 m above sea level, facing south-east. The soil consists of Pliocene sands. The vines are 24 years old and trained using Guyot and spur-pruned cordon systems.
Grapes
90% Vernaccia di San Gimignano and 10% Chardonnay.
Vinification
The grapes undergo soft pressing after brief contact with the skins, followed by static clarification at low temperature. Most of the must ferments in stainless steel at 15°C for approximately 30 days. A 20% portion is fermented in new 225 L French oak barriques.
Ageing
The wine remains on its fine lees for 60 days. The barrique-fermented portion, representing 20% of the wine, is aged for six months in new French oak.
Technical data
Vernaccia di San Gimignano Riserva DOCG. Annual production ranges from 2,666 to 6,666 bottles.
Tasting profile
Golden yellow. The bouquet combines citrus, floral and herbal aromas with mineral, flinty and vanilla nuances. The palate is dry and fresh, with good body, persistence and a bitter-almond finish.
Serving and pairing
Serve at 10–12°C with fish dishes, white meats or seafood.
