Vineyard and terroir
The vineyards lie in central Tuscany at 280 m above sea level and face south-east. Their soils consist of Pliocene sands. Vines range from 5 to 35 years old and are trained using Guyot and spur-pruned cordon systems.
Grapes
100% Vernaccia di San Gimignano.
Vinification
The grapes undergo soft pressing after brief skin contact. Static clarification takes place at low temperature, followed by fermentation in stainless steel at 15°C for approximately 30 days.
Ageing
The wine ages on its fine lees for 60 days.
Technical data
Vernaccia di San Gimignano DOCG. Annual production ranges from 20,000 to 53,000 bottles.
Tasting profile
Pale straw yellow, developing golden tones with age. The fine, intense bouquet combines citrus with broom and mimosa, herbal nuances, minerality and hints of flint. The palate is dry, fresh, well-structured and persistent, with the denomination's characteristic bitter-almond finish.
Serving and pairing
Serve at 10–12°C with fish dishes or white meats, or as an aperitif.
