Vineyard and terroir
The fruit comes from Paternoster vineyards in the Vulture area of Basilicata. The estate comprises approximately 20 hectares divided among several sites on the slopes of Monte Vulture, an extinct volcano. The vineyards are certified organic.
Grapes
100% Falanghina.
Vinification
Whole bunches are loaded into a pneumatic press, and only the free-run must is retained. Low-temperature fermentation takes place in a 50 hL autoclave. The wine undergoes secondary fermentation for approximately 90 days at low temperature.
Technical data
Alcohol: 13% vol. Bottle size: 750 ml.
Tasting profile
Pale straw yellow with delicate green highlights and a fine, persistent perlage. The nose combines intense yet elegant notes of white flowers and Golden Delicious apple. Fresh and harmonious on the palate, with softness balanced by lively acidity.
Serving and pairing
Serve at 8–10°C. Suited to aperitifs, starters and finger food, as well as delicate fish and vegetable preparations, including ethnic cuisine.
Label / history
During the 1970s Paternoster produced approximately 70,000 bottles of sparkling wine annually. Assensi was created as a link between that history and the future of sparkling-wine production in the Vulture area.
