Vineyard and terroir

The fruit comes from vineyards in the Mount Vulture area at elevations of 450–600 metres. Paternoster’s approximately 20-hectare estate is divided among several wine-growing districts around Barile, where the vineyards overlook the extinct Monte Vulture volcano and are rooted in black volcanic soil. The vineyards are certified organic.

Grapes

100% Aglianico del Vulture. The name Synthesi expresses the wine’s intended synthesis of grape variety, volcanic terroir, structure and longevity. Aglianico is naturally marked by high acidity and firm tannins and may be harvested well into November.

Vinification

The destemmed grapes undergo classic red-wine vinification. Fermentation and skin maceration take place in stainless-steel tanks for 12–15 days at 25–28°C, with periodic pumping over and punching down of the cap.

Ageing

Eighty percent of the wine matures for 12 months in large Slavonian oak casks. The remaining 20% spends 14 months in previously used French barriques. Bottle ageing lasts a further 7–8 months. The use of wood is intended to soften Aglianico’s naturally firm structure and bring the wine into balance.

Alcohol: 13% vol. Available formats: 750 ml and 1.5 L.

Tasting profile

Vibrant ruby red. The fragrant, ethereal bouquet combines blackberry, blueberry and other wild berries with pepper. The palate is dry and velvety, with integrated tannins, notable balance and a persistent finish.

Serving and pairing

Serve at 16–18°C in a large glass. Pair with game, red-meat dishes and mature cheeses.

Label / history

Synthesi serves as an introduction to Aglianico del Vulture and the Paternoster style, bringing together the variety’s fruit, acidity and tannic structure with maturation in Slavonian and French oak. Paternoster’s winemaking history in the Vulture dates to 1925. Production follows practices that avoid animal-derived products and allergens; packaging uses FSC-certified organic corks and label paper, together with recycled-paper cartons.
