Vineyard and terroir
The grapes come from the Vulture area. The organically managed, Guyot-trained vineyards have an average age of six to eight years and a maximum yield of 70 q/ha, equivalent to 7,000 kg/ha. Paternoster’s approximately 20 hectares are distributed among several sites on the slopes of Monte Vulture, an extinct volcano.

100% Aglianico del Vulture.
Vinification
Selected grapes are destemmed and vinified by the classic red-wine method. Fermentation and skin maceration take place in stainless steel for 12–15 days, with daily manual punch-downs and continuous temperature control. Malolactic fermentation also occurs in stainless steel.
Ageing
Half of the wine matures for 12 months in a Slavonian oak vat, followed by six months in bottle.

Alcohol: 13% vol. Bottle size: 750 ml.
Tasting profile
Bright ruby red with vivid reflections. Intense cherry, plum and other red-fruit aromas lead to a juicy, savoury palate, where prominent tannins are balanced by good freshness.
Serving and pairing
Serve at 16–18°C. It may also be poured lightly chilled at 8–10°C in a large glass. A versatile table wine for rich first courses such as baked lasagne and pasta with ragù, grilled meat, medium-aged cheeses, salumi and cured sausages.
Label / history
“Bariliott” means “from Barile,” the Vulture town in which the Paternoster family originated. It represents a youthful, fresh and immediately approachable interpretation of Aglianico and an introduction to both the Vulture area and the Paternoster style.
