Vineyard and terroir
The grapes grow at 800 m on the northern slope of Mount Etna, in volcanic soils. The composition of these soils and the local climate shape the wine’s freshness and minerality.
Vinification
The grapes are harvested by hand in mid-October, then destemmed and gently pressed. Fermentation takes place in stainless-steel tanks.
Ageing
The wine rests first in stainless-steel tanks and then in bottle.
