Vineyard and terroir
The vineyards lie at an average altitude of 500 m on sandy, silty soils. The vines average approximately 30 years of age, are Guyot trained and planted at 4,500 vines per hectare. Average grape yield is 8,000 kg/ha, with a must-to-fruit ratio of 70%.
Grapes
100% Nebbiolo, picked and sorted by hand. No grape drying is used.
Vinification
After gentle pressing and brief contact with the skins, the must is drawn off to obtain a delicate, luminous pink colour. Fermentation takes place entirely in stainless steel at controlled temperature, preserving varietal freshness and aromatic finesse. Maturation is also in stainless steel.
Technical data
Approximately 12.0% alcohol by volume, 5.7 g/l total acidity, less than 1 g/l total sugar and approximately 29 g/l dry extract. Production is around 2,000 bottles. Analytical and vineyard figures may vary with the vintage.
Tasting profile
A delicate, bright pink rosé with clean, refined aromas of flowers, small red berries and citrus. The finish is savoury and taut, while the overall profile balances aromatic finesse, freshness and character.
Serving and pairing
Serve at 12–14 °C. Pair with shellfish and citrus salad or tartare of trout, salmon or tuna. The suggested cellaring horizon is five years.
