Vineyard and terroir
Passione is made from selected Nebbiolo bunches grown in Valtellina. The Guyot-trained vines average approximately 70 years of age and stand at an average altitude of 650 metres. The sandy, silty vineyards have a density of 4,500 vines per hectare and yield about 6,500 kg per hectare. The must-to-fruit ratio is approximately 50%.
Grapes
100% Nebbiolo. The best bunches are harvested and sorted by hand, dried for three months and vinified from the end of December.
Vinification
Vinification includes three days of cold maceration followed by seven days on the skins.
Ageing
The wine matures for 12 months in new French oak barriques and then for 36 months in large chestnut casks.
Technical data
Approximately 15.5% alcohol by volume, 35 g/l dry extract, 5.5 g/l total acidity and less than 1 g/l total sugar. Approximate production is 18,000 bottles. Technical figures may vary with the vintage.
Tasting profile
Intense garnet red. The distinctly fruit-led bouquet combines vanilla, ripe fruit, spices, plum and cocoa. The palate is full, broad and imposing, with enveloping tannins and generous aromatic returns.
Serving and pairing
Serve at 20–22 °C with hearty meals, red meats, mature cheeses or Valtellina specialities. Available in 75 cl and 150 cl bottles, with a stated cellaring potential of 20 years.
