Grapes
100% Sauvignon Blanc. The grapes are picked and sorted by hand; no drying is used.
Vinification
Following gentle pressing, the must ferments in stainless steel at controlled temperature. A small portion is transferred to lightly toasted French oak and kept on its fine lees for several months. This measured use of wood adds breadth without masking Sauvignon’s varietal identity.
Ageing
Maturation takes place in stainless steel and French oak, including new French oak barriques. The oak-aged portion remains on fine lees for several months.
Tasting profile
Citrus notes are joined by mountain herbs, white peach, acacia blossom and a restrained spicy accent. The palate is fresh and vibrant, with notable aromatic depth.
Serving and pairing
Serve at 12–14 °C. Suitable partners include trout marinated with dill, shellfish carpaccio, summer salads with citrus and herbs, and fresh Scimudin cheese. The suggested cellaring horizon is five years.
