Vineyard and terroir
The grapes come from Montalcino. The technical sheet places the vineyards at 400 m, with an average yield of 30 hl/ha and a planting density of 4,000 vines/ha. The vines are trained to spurred cordon over grassed soil. Deep Pliocene soils, composed mainly of clay marl, provide pronounced minerality.
The climate is Mediterranean, with most precipitation in spring and autumn. Frequent winds across the middle hills help maintain vine health, while generally mild conditions and plentiful sunshine allow gradual, complete ripening.
Grapes
100% Sangiovese Grosso.
Vinification
The grapes are harvested manually at full ripeness. Vinification takes place in stainless steel, with alcoholic fermentation at approximately 26°C for 10–12 days on the skins. Malolactic fermentation follows in stainless-steel tanks.
Ageing
The technical sheet specifies 30 months in 25 hl Slavonian oak casks and 20 months in 225 L French oak barrels, followed by four months in bottle before release.
Technical data
Alcohol: 14.5% vol. The wine is also available in a 1.5 L Bordeaux-format bottle presented in a wooden case.
Tasting profile
Ruby red tending toward garnet. The bouquet is very intense and persistent, with red-fruit and spice notes. The palate is balanced, with velvety tannins and a long aromatic persistence.
Serving and pairing
Serve at 22°C. Pair with mature cheeses, red meat, roasts, braised dishes and game.
