Vineyard and terroir

The grapes come from vineyards in the municipality of Montalcino at 500 m. Planting density is 3,500 vines/ha and average yield is 45 hl/ha. The vines are trained to spurred cordon over grassed soil. The deep Pliocene soils consist predominantly of clay marl and provide marked minerality.

The climate is Mediterranean, with rainfall concentrated in spring and autumn. Frequent winds across the middle hills favour healthy vines. Mild conditions and abundant sunshine during the vegetative cycle allow the bunches to ripen gradually and completely.

Grapes

100% Sangiovese Grosso.

Vinification

The grapes are harvested manually at full ripeness. Alcoholic fermentation proceeds at approximately 26°C for 7–8 days on the skins, followed by malolactic fermentation in stainless-steel tanks.

Ageing

The wine matures for 8–10 months in 30 hl oak casks.

Alcohol: 13% vol.

Tasting profile

Ruby red. The delicate bouquet recalls violets, while the palate shows raspberry jam and red-fruit flavours.

Serving and pairing

Serve at 20°C. Pair with cured meats, rich and savoury first courses, roasted red meat or Tuscan ham.
