Vineyard and terroir

Cervio is produced from estate vineyards in the municipality of Montalcino at 500 m. Planting density is 3,500 vines/ha and average yield is 30 hl/ha. The vines are trained to spurred cordon over worked soil. Deep Pliocene soils composed mainly of clay marl provide pronounced minerality.

The climate is Mediterranean, with precipitation concentrated in spring and autumn. Frequent winds in the middle hills help maintain vine health. Mild weather and numerous sunny days throughout the vegetative cycle promote gradual, complete ripening.

Grapes

100% Cabernet Franc.

Vinification

The grapes are harvested manually. Alcoholic fermentation takes place below 26°C for approximately ten days on the skins. Malolactic fermentation follows in stainless-steel tanks.

Ageing

The wine matures for 18 months in French oak barrels ranging from 225 to 500 L, followed by four months in bottle before release.

Alcohol: 14.5% vol.

Tasting profile

Intense ruby red. The bouquet is elegant and persistent, with spice notes. The palate is persistent and balanced, with a long, complex finish.

Serving and pairing

Serve at 20°C with grilled red meat.
