Questo vino
Vineyard and terroir
The wine comes from organically managed, ICEA-certified vineyards in Gaiole in Chianti, at 450–500 metres above sea level. The 2024 technical sheet gives a vine age of 25–35 years, planting density of 5,500–6,000 vines per hectare and yield of 60 q/ha. The soils are limestone and clay, and the vines are trained to Guyot and spurred cordon.
Grapes
100% Sangiovese.
Vinification
The 2024 grapes were harvested by hand in September and October, with selection in the vineyard and on a vibrating sorting table. They are gently destemmed and fermented in unlined Nomblot concrete tanks. The current technical sheet gives a maceration of 15–20 days. The longer cellar account describes approximately 15 days of fermentation followed by another five days of maceration under a submerged cap.
Ageing
The current technical sheet specifies 11 months in old French oak tonneaux and three months of refinement in bottle. The broader cellar description says that, after drawing off, the wine is divided among old tonneaux, large untoasted Grenier casks and concrete tanks for approximately 12 months. The components are then blended in large outdoor concrete tanks for another three months of tartaric stabilization and natural fining before bottling.
