Vineyard and terroir
The grapes come from several plots in Loc. Castagnoli, together covering 3 ha at an average altitude of 500 m. The sites have various exposures and medium-textured soils rich in Alberese rock fragments and limestone. The 30-year-old vines are spur-pruned and planted at 5,000 vines per hectare, with an average yield of 1 kg per plant.
Grapes
90% Malvasia Lunga del Chianti and 10% Trebbiano Toscano.
Vinification
Harvest takes place in the second half of September. The grapes remain on drying racks for at least 3 months before fermentation in cask. Malolactic fermentation also takes place in cask.
Ageing
At least 4 years in 100 L casks of various ages, followed by at least 6 months in stainless steel and at least 1 year in bottle.
Technical data
Annual production is approximately 1,000 bottles.
Tasting profile
Amber in colour, with a rich, intense bouquet of honey, vanilla, dried fruit and nuts, especially almond. The palate is enveloping and harmonious, ending in a long finish.
Serving and pairing
Serve at 16°C with blue or cured cheeses and desserts.
Label / history
This historic dessert wine is produced on a very small scale using traditional methods. It is dedicated to the ancestors who passed down the custom of making Vin Santo at Castagnoli.
