Vineyard and terroir
The fruit comes from two estates near Monte Garbi. One vineyard is predominantly limestone, contributing concentration and spicy aromas; the other has clay soils, contributing fruity notes and a rounded tannic structure.
Vinification
The grapes are harvested and sorted by hand, then dried on flat wooden trays for about three months, producing must with a high sugar concentration. Fermentation lasts 25 days in temperature-controlled stainless-steel tanks with selected yeasts. Malolactic fermentation takes place in 500-litre oak barrels to soften the acidity.
Ageing
The wine matures for two years in new French oak barrels, followed by six months in bottle.
Tasting profile
Balanced and structured, with a rich, deep palate led by black cherry, followed by light cocoa and gently bitter balsamic spice. Ageing brings a soft, rounded texture and warm notes of vanilla and tobacco. The finish is firm and tannic, balanced by slight residual acidity.

Recommended with winter dishes, including roasts, red meat and game.
