Vineyard and terroir

The 2022 wine comes from one historic vineyard at Santedame Estate in Castellina in Chianti, in the heart of Chianti Classico. The parcel stands at 430 m and has very rocky, moderately deep soil composed of silt, sand and clay, with shale and calcareous marl. The broader product description places the estate vineyards at 300–400 m and emphasizes gravel, galestro and clay.

Grapes

Blend proportions vary by vintage. Latest published vintage (2022): 98% Sangiovese and 2% Colorino. Colorino is an indigenous Tuscan variety that had nearly disappeared by the 1980s. An old Colorino vineyard beside a medieval hermitage on the Santedame property became the basis for its recovery and preservation.

Vinification

The grapes are rigorously selected in the single vineyard. For 2022, alcoholic fermentation and maceration take place in temperature-controlled stainless-steel vats for approximately 20 days.

Ageing

Total maturation lasts 30 months. Sangiovese spends 24 months in large Slavonian oak casks, while Colorino matures in barriques. After blending, the wine rests in concrete vats and then for at least three months in bottle.

Technical data

The 2022 vintage has 15.5% alcohol. Production is limited to no more than 15,000 bottles and the wine is made only in selected exceptional years.

Tasting profile

Intense ruby red. Peppery aromas lead into coffee, liquorice and cocoa, followed by fruit notes of sour cherry and blackberry, then bitter herbs and toasted nuances. The palate is warm, muscular and full-bodied, with assertive tannins and a persistent, savoury finish.

Serving and pairing

Serve at 18 °C with grilled or roasted meat and long-aged hard cheeses.

Vintage notes

The 2022 growing season was hot and dry, with balanced conditions during harvest. It was the first certified-organic vintage. The wine has been produced in the exceptional 2015, 2016, 2019, 2020 and 2022 vintages.

Label / history

The name refers to the medieval romitorio, or hermitage, beside the rediscovered Colorino vineyard—a resting place for pilgrims travelling to Rome. The wine was created to celebrate the research and conservation of native Tuscan grape varieties.
