Vineyard and terroir

Pinot Bianco is planted on ventilated hillsides in Collio, in predominantly marly Eocene soils composed of clay and limestone. The variety produces small, compact bunches with round, golden-yellow berries. The 2019 technical sheet records Guyot and spur-cordon training and a yield of 50 q/ha.

Grapes

100% Pinot Bianco.

Vinification

The 2019 grapes were picked manually from the second ten days of August through the third ten days of September. Gentle pressing was followed by a short settling period without sulfur dioxide. Fermentation was initiated with pied de cuve and ran for 10–12 days in stainless steel at 16 °C.

Ageing

Eight months on the lees in stainless steel, followed by at least five months in bottle.

Technical data

The 2019 wine has 12.5% alcohol, 5.94 g/L total acidity and 0.7 g/L residual sugar.

Tasting profile

Bright, clear yellow with golden highlights. Ripe fruit and citrus are joined by creamy and floral notes, giving a fresh yet enveloping bouquet. The palate is savoury and closely aligned with the nose, with richness, persistence and a refreshing finish that contributes elegance.

Serving and pairing

Serve at 13 °C. Pair with fish starters, white meats or baked fish.
