Vineyard and terroir

Sauvignon is cultivated on Collio hills, where it favors fresh clay together with hilly Eocene-origin marl soils. It produces small bunches with medium-sized berries. Training combines Guyot and cordon spur, with a stated yield of 50 q/ha.

Grapes

100% Sauvignon.

Vinification

The grapes are picked manually between the final ten days of August and the first ten days of September. Soft pressing is followed by brief settling without sulfur dioxide. Fermentation takes place in stainless-steel tanks for 10–12 days at 14 °C.

Ageing

The wine matures on its lees in stainless steel for 8 months and receives a minimum of 5 months in bottle.

Technical data

The 2019 wine has 13.5% alcohol, 5.52 g/L total acidity and 0.8 g/L residual sugar.

Tasting profile

Straw yellow with pronounced green reflections. The aroma combines delicate flowers, exotic fruit and citrus, with a warm, enveloping character and considerable complexity. The palate layers mint and nettle with exotic-fruit and saline notes in balanced form.

Serving and pairing

Serve at 13 °C. Suitable as an aperitif and with vegetable dishes—especially asparagus—as well as seafood and soups. Bottle age adds body.

Label / history

Sauvignon was introduced to Friuli from the Sauternes and Bordeaux areas and found favorable soil and climatic conditions. The first vintage was 1972.
