Vineyard and terroir

Pinot Grigio is grown on Collio hills in Eocene-origin marl soils described as having a medium marl content. The variety produces small bunches of round, red-grey berries. The vines are trained to Guyot, and the stated yield is 60 q/ha.

Grapes

100% Pinot Grigio. The variety is described as a bud mutation of Pinot Noir.

Vinification

The grapes are harvested manually during the second and third ten-day periods of August. They undergo soft pressing followed by brief settling without sulfur dioxide. Fermentation is initiated with pied de cuve and proceeds in stainless-steel tanks for 10–12 days at 16 °C.

Ageing

The wine remains on its lees in stainless steel for 8 months, followed by at least 5 months in bottle.

Technical data

The 2019 wine has 13.5% alcohol, 5.33 g/L total acidity and 0.8 g/L residual sugar.

Tasting profile

Golden yellow. The fresh, inviting aroma shows banana and passion fruit. The palate is savory and notably fresh, combining drinkability with complexity. The flavors are persistent and closely echo the aroma.

Serving and pairing

Serve at 13 °C. It pairs with fish starters and main courses. Young bottles can be served as an aperitif, while aged examples accompany swordfish and mixed grilled fish.
