Vineyard and terroir

The grapes are selected within the Massifitti vineyard in the Fittà U.G.A. This approximately 2 ha site faces south at an elevation of 300 m. Its volcanic soil is particularly rich in compact basaltic rocks.

Grapes

100% Trebbiano di Soave. The wine is made only in the best vintages, using selected Trebbiano bunches.

Vinification

The grapes are harvested manually into boxes at the beginning of September. Indigenous yeasts conduct alcoholic fermentation in steel for 15 days at 15–16 °C. Malolactic fermentation is not performed. The wine is made by the traditional method with zero dosage.

Ageing

The wine matures in bottle on its lees for 24 months.

Metodo Classico, Dosaggio Zero. Alcohol: 12.50% vol.

Tasting profile

Bright straw yellow with a very fine, continuous perlage. Sulphurous nuances and toasted dried fruit accompany fresh citrus and mineral aromas. The palate is clean and dry, ending with an intense savory extension. The bubbles are described as silky and supported by pronounced freshness.

Serving and pairing

Serve at 10–12 °C. Pair with fish dishes. Its cleansing acidity also suits fried foods and cold cuts.

Label / history

An experimental traditional-method sparkling wine developed as a further stage in Suavia’s project to recover and study Trebbiano di Soave. It is produced only in favorable vintages from selected grapes, emphasizing freshness and its connection to the volcanic territory.
