Vineyard and terroir

The grapes come from a 3-hectare vineyard at Tenuta Castel Serranova in Carovigno, in the province of Brindisi. The rows have a North–South orientation, and the soil is composed of limestone and clay. The vines are trained to spurred cordon and yield an average of 1.5 kg per plant.

Grapes

100% Ottavianello, a native variety of upper Salento that is genetically similar to Cinsault. The Flaminio collection is devoted to local grape varieties and takes its name from the historic Flaminio vineyards, planted near San Pietro Vernotico on the site of an ancient Messapian settlement.

Vinification

The grapes are harvested by hand in the third ten-day period of September. After soft destemming and crushing, fermentation and maceration take place at controlled temperature in thermoregulated stainless-steel tanks for 15 days. Spontaneous malolactic fermentation follows.

Ageing

The wine matures in cement vats, followed by three months of bottle ageing.
