Vineyard and terroir
Bindo comes from the I Colli estate at Monteriggioni in Tuscany. Its vineyards stand at approximately 400 m above sea level on calcareous soil, with vines aged 20–25 years.
Grapes
Malvasia bianca, Trebbiano and Chardonnay; proportions are not specified.
Vinification
After destemming and soft pressing, the must is transferred to stainless-steel tanks for alcoholic fermentation at a controlled 16–18°C.
Ageing
The wine remains in stainless steel for a few months before bottling.
Tasting profile
A very pale, paper-white colour with golden reflections. The intense bouquet suggests peach, melon and pear. The palate is fresh and savoury, supported by good acidity. It is intended to be enjoyed young to preserve this freshness.
Serving and pairing
Serve at 12°C as an aperitif or with fish. Store away from light at a constant temperature of approximately 17°C.
Label / history
The wine is dedicated to Bindo Bindi, governor of Orvieto in the fifteenth century; the dedication refers to Orvieto’s reputation for white wine.
