Documented position within the cooperative system

In the 2016/2017 financial year, the winery appeared as Cantina di Mori e Colli Zugna, one of ten first-tier wineries supplying Cavit and one of five member wineries associated with Vallagarina.

By the 2024/2025 financial year, it was identified as Cantina Sociale Mori–Colli Zugna and remained associated with Vallagarina. It was then one of eleven social cooperative wineries belonging to Cavit, whose second-tier structure brings together cooperative wineries as legal-entity members.

2016/2017Cantina di Mori e Colli Zugna was documented among Cavit’s ten first-tier contributing wineries and assigned to the Vallagarina wine-growing area.
2024/2025Under the name Cantina Sociale Mori–Colli Zugna, the cooperative was listed among Cavit’s eleven associated social wineries, still representing Vallagarina.

Terroir

Cantina Sociale Mori–Colli Zugna is associated with Vallagarina, the southern Trentino macro-area represented in the Cavit cooperative network.

Vallagarina has a moderate continental climate and considerable geological diversity. Its valley floor contains sandy and silty soils of alluvial origin. The hills include soils of glacial origin as well as dolomitic and calcareous formations. Within the wider macro-area, Isera and Brentonico are distinguished by well-structured basaltic soils.

These contrasting environments give Vallagarina the capacity to support multiple types of viticulture: the alluvial valley-floor soils are associated with approachable white wines, while the glacial, dolomitic and calcareous hill soils are suited to white wines intended for ageing. The basaltic sectors are used for both sparkling-wine bases and structured red wines.

Viticulture is conducted within Cavit’s shared cooperative framework. Across this system, individual winegrowers cultivate an average of approximately 1.2 ha, a scale associated with close, artisanal vineyard care and manual harvesting.

Since 2010, growers and technicians at all associated social wineries have had access to PICA — Piattaforma Integrata Cartografica Agriviticola, developed with Fondazione Edmund Mach and Fondazione Bruno Kessler. The platform combines vineyard-management data, soil mapping, geo-climatic analysis, field sensors and predictive models. It is used to identify varieties suited to the technical and environmental conditions of each plot, conduct controls and selections throughout the agronomic cycle, and monitor ripening to determine the optimum harvest moment.

PICA also supports precision farming through the rationalisation of phytosanitary treatments, targeted defence against pathogens, continuous plot-specific monitoring, adaptation of resources to individual vineyards and optimisation of water use. The system returns processed data to growers through personalised notifications intended to guide daily vineyard decisions.

All members of the Cavit system have obtained SQNPI — Sistema Qualità Nazionale Produzione Integrata certification. The cooperative framework also promotes green manure, maintenance of dry-stone walls and insect mating disruption as practices supporting soil health, biodiversity and the Trentino landscape.

Cantina Sociale Mori–Colli Zugna operates within a two-tier cooperative production chain. Cavit receives, examines and selects raw materials produced by its associated wineries and monitors the broader process from viticulture through selection, maturation, bottling and marketing. Technical vinification protocols, cellar vessels, fermentation regimes and maturation practices specific to Mori–Colli Zugna are not defined.

Filosofia

Within the shared cooperative model, small-scale grower stewardship is combined with centralised agronomic expertise, research and precision technology. The objective is to preserve the identity of individual territories while improving consistency, grape quality and environmental performance.

The model joins traditional farming knowledge with soil mapping, geo-climatic analysis and daily vineyard monitoring. Environmental responsibility is pursued through integrated production, reduced and better-targeted treatments, careful water management, protection of soil and biodiversity, and technical support adapted to each vineyard.
