Questo vino
Vineyard and terroir
The grapes come from I Colli Estate in the Chianti Classico area of Tuscany, at approximately 350 metres above sea level. The 15–20-year-old vines grow in texturally rich Alberese, a marly limestone soil with abundant stony material. Training combines spur cordon and Guyot.
Grapes
100% Sangiovese.
Vinification
Fermentation takes place in stainless-steel vats at a controlled temperature of 26–28°C. Skin maceration lasts approximately 15 days. Shortly after malolactic fermentation, the wine is transferred to oak barrels.
Ageing
The wine matures in large oak barrels and subsequently rests in bottle in the cellar before release; the duration of either phase is not specified.
Tasting profile
Intense ruby red. The nose is full, fresh and fruit-led, with distinct cherry and floral notes. The palate is rounded, soft, savoury, inviting and balanced, leading to a long, elegant finish.
Serving and pairing
Serve at 18°C and open at least one hour beforehand. Pair with roasted or cured red meat, game, cheese and Mediterranean first courses. Store horizontally at 15–17°C, away from light. The ageing potential exceeds 10 years.
