Vineyard and terroir
The grapes come from the I Colli estate at Monteriggioni in Tuscany. The vineyards stand at approximately 300 m above sea level on stony terrain containing rock from the Montagnola hills. The vines are 10–15 years old and trained to spur cordon and Guyot.
Grapes
100% Sangiovese.
Vinification
Nicolò is made with the traditional Tuscan Governo method. A selection of high-quality grapes is laid out to dry, while the remaining Sangiovese is destemmed and gently pressed. The fresh grapes ferment in stainless-steel vats for about 15 days at approximately 25°C, a controlled temperature selected to retain fruit and floral aromas. Once drying is complete, the dried grapes are softly pressed. Their must is added to the wine from the first fermentation, initiating a second fermentation. After racking, malolactic fermentation is completed.
Ageing
The wine matures for a few months in used barriques at the I Colli estate before bottling.
Tasting profile
Intense ruby red. The elegant bouquet presents concentrated dried-fruit aromas and floral nuances. Governo gives the palate roundness and fullness; the wine is structured, soft and harmonious.
Serving and pairing
Serve at 18°C with white or red meat, cheese, and traditional Mediterranean first courses. Store away from light at a constant temperature of 17°C. Its ageing potential exceeds five years.
Label / history
The wine is dedicated to Nicolò Casini, described as the mind and heart of Bindi Sergardi. Its identity celebrates Governo, an old Tuscan vinification tradition.
