Vineyard and terroir
The grapes come from I Colli Estate at Monteriggioni in Tuscany, at approximately 350 metres above sea level. The soils combine Roccia della Montagnola and Alberese. The 15–20-year-old vines are trained to spur cordon and Guyot.
Grapes
50% Cabernet Sauvignon and 50% Merlot.
Vinification
Fermentation takes place in stainless-steel vats at a controlled temperature of 28–30°C, with 18–21 days of skin maceration. Shortly after malolactic fermentation, the wine is moved into oak barriques.
Ageing
Approximately 18 months in barriques, half of them new, followed by a further 12 months of bottle refinement at the estate.
Tasting profile
The colour ranges from intense ruby red toward garnet. The broad, complex bouquet combines mature red fruit, cassis, cinnamon, toasted hazelnut and an incense nuance. The palate is full, soft and generous, with substantial structure and well-defined tannins.
Serving and pairing
Serve at 18°C and open the bottle one hour in advance. Pair with roasted or cured red meat, game and mature cheeses. Store at a constant 17°C. The ageing potential exceeds 20 years.
Label / history
“Simbiosi” means symbiosis: two elements strengthening one another. Its label unites the Bindi and Sergardi family coats of arms in reference to the marriage of Gerolamo Bindi and Calidonia Sergardi, embodying the idea that unity creates strength.
