Vineyard and terroir
The grapes come from municipalities within the Dogliani production area. The vineyards have calcareous-clay soils and vertically trellised vines pruned using the Guyot system. Maximum permitted yield is 8 tons/ha.
Grapes
100% Dolcetto.
Vinification
The grapes are picked entirely by hand in mid-to-late September. After destemming and crushing, alcoholic fermentation takes place at a controlled 24–26°C, with 4–6 days of skin contact. Malolactic fermentation is completed.
Ageing
The wine matures for 3–4 months in steel tanks before bottling.
Technical data
Alcohol: 12.5% vol.
Tasting profile
Intense ruby red with violet reflections. The nose is pronounced, with characteristic blackberry and cherry aromas. Dry and harmonious on the palate, finishing with a pleasant almond note.
Serving and pairing
Serve at 18–20°C. Intended for drinking without extended cellaring. Pair with starters, simple pasta dishes, flavoursome soups, white meats, mixed boiled meats, cold cuts and soft cheeses.
