Vineyard and terroir
The grapes are grown in Diano d’Alba on calcareous-clay soils. Vines are trained on vertical trellises and Guyot pruned. Maximum yield is 8 tons/ha.

100% Dolcetto.
Vinification
The crop is harvested entirely by hand in late September. Grapes are destemmed and crushed, followed by alcoholic fermentation at a controlled 24–26°C and 4–6 days of skin contact. Malolactic fermentation is completed.
Ageing
The wine matures for 3–4 months in steel tanks before bottling.
Technical data
Alcohol: 14% vol.
Tasting profile
Intense ruby red with violet nuances. The rich nose has characteristic cherry aromas. The palate is dry and harmonious, with a pleasant almond aftertaste.
Serving and pairing
Serve at 16–18°C and drink without extended cellaring. Suitable with starters and pasta dishes, white-meat main courses, mixed boiled meats, cold cuts, and semi-mature sheep’s- or goat’s-milk cheeses.
