Vineyard and terroir
The grapes are grown in Diano d’Alba, Grinzane Cavour, Monforte d’Alba, Novello and Verduno. The soils are mainly clayey, calcareous and sandy. Vines are trained on vertical trellises with Guyot pruning. Maximum yield is 10 tonnes per hectare.
Grapes
100% Chardonnay.
Vinification
The grapes are picked entirely by hand in the first half of September. They are destemmed and crushed, then pressed in an inerted pneumatic press. Fermentation takes place in steel with selected yeasts at 16–18°C. Malolactic fermentation is not envisaged.
Ageing
The wine spends at least two months on the lees, with weekly bâtonnage.
Technical data
Alcohol is 13% vol.; the technical specification gives a minimum of 10.5% vol. Minimum total acidity is 4.5 g/L, and minimum net dry extract is 14 g/L.
Tasting profile
Straw yellow. The aroma is intense and fruit-forward, while the palate is dry and balanced.
Serving and pairing
Serve at 8–10°C. It works broadly with starters and particularly well with fish. This fresh wine is at its best within the year following the vintage. Store bottles horizontally in cool, dry and dark surroundings at a constant temperature.
