Vineyard and terroir
The grapes come from Pietrarizzo, an area that local people consider one of the finest vineyard sites. The vines grow in volcanic soils at 650 metres above sea level.
Vinification
The grapes are harvested by hand during the middle ten days of October and taken quickly to the winery in small crates. They are sorted by hand on conveyor belts and destemmed. The berries are lightly crushed before going into the press. After gentle pressing, the must is cold-settled, then fermented at around 15–16 °C in 50 hL oak barrels.
Ageing
The wine stays in the same 50 hL oak barrels on the fine lees for around 5 months, which gives it its smoky notes. After bottling it matures for a further 3 months in the winery's cellars.
Tasting profile
Aromas of sea salt and Mediterranean herbs, evoking a sea breeze. The palate is fresh and full, with distinctive mineral notes reminiscent of seashells and a light smokiness that reflects the volcanic origin of Pietrarizzo.
