Vineyard and terroir
The grapes grow on the northern slopes of Mount Etna at 600 m above sea level, in the municipality of Castiglione di Sicilia. Yields are around 70 quintals/ha.
Vinification
The grapes are hand-harvested into small crates in mid to late October and taken quickly to the winery, where they are sorted by hand on a selection belt. After destemming and gentle crushing they go into cement tanks. Maceration takes place at a controlled 22–25 °C for 10–12 days. Once fermentation is complete, the wine stays on the skins for several more days. The juice is then drained and the pomace pressed in a traditional vertical press.
Ageing
The wine ages for about 6 months in large wooden barrels, then a further 3 months in the winery's cellars after bottling.
Tasting profile
Fresh and elegant. The nose combines delicate spice, graceful floral notes and a faint touch of smoke that reflects the wine's volcanic origins.
Serving and pairing
Pairs with red meat, hard cheeses and traditional Sicilian appetizers.
