Questo vino
Vineyard and terroir
The grapes come from Alta Maremma in the Colline Metallifere area. The sandy-loamy soils contain relatively few stones. Vines are planted at 5,500 per hectare and trained to Guyot. Integrated pest management is practised in the vineyard.
Grapes
100% Ansonica, a variety associated with Tuscan tradition.
Vinification
The grapes are picked by hand into 15 kg crates in the second to third week of September. Vinification takes place in amphora over 2 months, with maceration on the skins. The wine is neither clarified nor filtered.
Ageing
Four months in amphora.
Technical data
Average production is approximately 2,000 bottles. The wine is presented in a Burgundy-shaped bottle.
Tasting profile
Brilliant golden yellow. The complex, deep nose combines tropical fruit, flint and Mediterranean scrub herbs. The palate is notably complex, fresh and savoury, supported by pronounced acidity.
Serving and pairing
Serve at 12–14°C. Pair with lean fish, seafood and shellfish, asparagus, grilled or fried fish, or vegetarian dishes.
