Vineyard and terroir
The wine reflects sandy Mediterranean terrain, expressed through a marked mineral and lightly saline character.
Grapes
85% Vermentino and 15% Grechetto.
Vinification
The grapes are harvested by hand, selected and destemmed, then immediately chilled to 6°C. They remain in the press for 12 hours of cold skin maceration. The must subsequently settles for 48 hours at 4°C before fermentation at 16–17°C. Stabilisation precedes bottling approximately five months after harvest.
Ageing
Five months in steel vats.
Technical data
DOC Maremma Toscana Vermentino. The current presentation gives 13.5% alcohol, production of 11,000 bottles and a 0.75 L format. The 2019 technical sheet records 13% alcohol and 8,000 bottles.
Tasting profile
Brilliant yellow with pale golden reflections. Citrus, apple, pear and exotic fruit shape the aroma. Grechetto contributes lightly herbaceous, mineral and subtly saline dimensions. The palate is harmonious, fresh, full and rounded, with balanced acidity and pronounced minerality.
Serving and pairing
Recommended with starters, fish and seafood.

The 2019 technical sheet differs from the current presentation in alcohol and production volume: 13% and 8,000 bottles versus 13.5% and 11,000 bottles.
