2003: a move to Maremma
Founders and owners Anna Maria Cruciata and Hugh Constable Maxwell moved to Maremma in 2003. The decision was motivated by the landscape and their wish to live in closer contact with nature.
They converted fields that had historically served as pasture for Maremman bulls into vineyards, planting grape varieties associated with the area. These vineyards became the basis for a family-owned and family-managed estate producing red, white and rosé wines.
2004: organic viticulture
Organic vineyard management began in 2004. The approach centred on caring for and enriching the soil, treating the vineyard as a balanced agricultural unit and encouraging biodiversity and natural processes.
2015: organic certification and the first Riserva
The vineyards received organic certification in 2015. The quality of the 2015 vintage also led to the first Riserva expression of REVIRESCO Morellino di Scansano. Production of the Riserva continued in subsequent years.
Subsequent development
Sangiovese remained the principal grape, serving both red and rosé production. The estate also developed smaller plantings or production of Montepulciano and, more recently, Ciliegiolo. White production was based on Vermentino together with a small amount of Grechetto.
The range later expanded to include fully natural wines made without added sulphites. In the cellar, this work brought traditional natural-wine methods alongside modern vinification techniques, while the wider range continued to include reds, whites, rosés and sparkling rosé.
Terroir
Val di Toro lies at Poggio La Mozza in the commune of Grosseto, in the heart of Maremma in Southern Tuscany. Its vineyards cover 15 hectares.
Powerful winds are an important environmental influence and help preserve the grapes. Vineyard management places particular emphasis on soil care: agronomic practices are intended to return value to the ground, enrich it and maintain the vineyard as a balanced, sustainable agricultural unit.
The estate connects the expression of its wines with this combination of Maremman land, wind, healthy fruit and biological diversity. No individual vineyard altitudes, exposures or geological profiles are defined.
Vinificazione
Organic viticulture has been practised since 2004, with organic certification in place since 2015. Environmental sustainability is the guiding principle of the vineyard programme.
Agronomic work is designed to enrich and give back to the soil, while the vineyard is managed as a balanced and sustainable farming unit. The approach follows natural rhythms, embraces biodiversity and encourages natural processes with the aim of growing healthy fruit.
Grapes are harvested by hand and selected. Sangiovese is the dominant variety, supplemented by smaller quantities of Montepulciano and Ciliegiolo for red-wine production and by Vermentino and Grechetto for white wines.
The winery stands at the centre of the estate. Production is organised around close attention to every stage of processing and combines modern vinification technology with traditional methods used for natural wines.
The fruit is hand-harvested and selected. Red wines mature in barrels in a dedicated barrique cellar. The estate has also introduced fully natural wines made without added sulphites, extending a range that encompasses red, white, rosé and sparkling styles.
Across the cellar and vineyard, the production model prioritises organically grown fruit, restrained intervention and practices intended to avoid damaging the soil from which the grapes originate.
Filosofia
Val di Toro treats the path from soil care to an opened bottle at the table as a single craft. The way a wine is produced is considered as important as the finished wine itself.
Environmental sustainability guides the work. The vineyard is approached as a balanced farming unit, with practices intended to nourish the soil, embrace biodiversity and encourage natural processes. The goal is healthy, expressive fruit grown within nature’s rhythms rather than through unnecessary intervention.
In the cellar, meticulous handling and clean production are paired with the best available fruit. Human input remains part of the process, but it is framed as a response to the direction set by nature. Modern winemaking techniques coexist with traditional methods for natural wines, including a range produced without added sulphites.
The estate also places family involvement, passion and respect for the land and nature at the centre of its identity.
