Grapes
Sangiovese from Maremma, harvested and selected by hand.
Vinification
After destemming, fermentation takes place in temperature-controlled cement vats. It begins at 18°C and rises in controlled stages to approximately 28°C toward the end. Maceration lasts about 20 days, with daily pump-overs and a short délestage near the end. Malolactic fermentation also takes place in cement.
Ageing
Approximately 20% of the wine matures for about six months in second-fill French oak tonneaux. The remainder stays in vitrified cement vats for approximately one year.
Technical data
DOC Maremma Toscana Sangiovese. The current presentation gives 13% alcohol, production of 20,000 bottles and a 0.75 L format. The 2018 technical sheet records 13.5% alcohol and 10,000 bottles.
Tasting profile
Ruby red. The expressive, fruit-led aroma recalls ripe wild berries, with a light vanilla nuance. The palate is fruity, fresh and gently tannic, presenting a youthful and versatile expression of Maremma Sangiovese.

Recommended with pasta and meat dishes.

The 2018 technical sheet differs from the current presentation in alcohol and production volume: 13.5% and 10,000 bottles versus 13% and 20,000 bottles.
