Questo vino
Vineyard and terroir
Sangiovese grown in Tuscany.
Grapes
Sangiovese.
Vinification
The grapes are picked by hand and selected on a sorting table. They are destemmed promptly at approximately 18°C and transferred to temperature-controlled vitrified cement vats. Fermentation begins at 18°C, with the temperature raised gradually to no more than 28°C toward the end. Maceration lasts around 20 days and includes pump-overs and délestage. The wine is then drained, the pomace gently pressed, and the wine racked. Malolactic fermentation takes place in cement.
Ageing
Approximately six months in vitrified cement vats, followed by another six months in second-fill French oak tonneaux.
