Vineyard and terroir
Zebras is produced only in years considered excellent, using grapes from the estate vineyards that achieve the best ripeness. The soils combine calcareous clay with sandy silt. Vines are trained to the spurred-cordon system at an average density of 5,500 plants per hectare.
Grapes
100% Sangiovese.
Vinification
The grapes are harvested by hand and selected before pressing. Maceration and fermentation take place together for 20–25 days in temperature-controlled stainless-steel tanks at 26–28°C.
Ageing
The wine matures for 30–36 months. Sixty percent is aged in 225 L French oak barriques, while the remaining 40% matures in 10–30 hL oak casks. This is followed by at least 18 months of bottle ageing.
Technical data
Alcohol: 14% vol.
Tasting profile
Brilliant, intense ruby red. The complex, expressive bouquet highlights red berries and violets, followed by fine spice, tobacco and vanilla. The palate has substantial structure and a pronounced tannic framework, with balance and persistence.
Serving and pairing
Serve at 18°C with roasted meats, game, stews and cheese.
