Vineyard and terroir
The La Toledana Gavi vineyards extend over 25 ha. Their plots differ in exposure, slope, geology, drainage and soil mineral content, requiring vineyard work to be adapted closely to each site and season.
Vinification
The grapes are harvested in November as a late harvest. Fermentation uses the “mosto fiore” method with selected yeasts at 12–13 °C for 20 days.
Ageing
The wine rests on its lees in steel tanks for six months.
Label / history
La Toledana Castle was built by the noble Genoese Imperiale family in the first half of the 16th century and subsequently passed to the Lercari and Gambioso families. According to the account given, La Toledana takes its name from the castle’s resemblance to two humps: the Greek “Tulon,” meaning “humpbacked,” evolved into “Tuledon,” then Toleda and finally Toledana.
