Family background
Villa M's roots are connected to the Colla family's long relationship with Moscato. The family had cultivated vineyards in Piedmont since the mid-19th century, beginning around Santo Stefano Belbo. Moscato remained part of its viticultural activity over successive generations and was even planted among rows devoted to Barolo.
1978: the beginning of Villa M
Production of Moscato began in 1978 as a distinct undertaking within the family's wine activity. This development represented a return to the family's earlier Moscato tradition. The operation subsequently became an independent winery under the name VillaM, now styled Villa M.
Family recipes and the present range
Villa M later developed a range of wine-based creations centred on vermouth and Barolo Chinato. Both current red vermouths derive from old family recipes. The Barolo Chinato follows another family recipe, retained by the family for twenty years, and continues the local tradition of aromatizing Barolo with cinchona bark and spices.
Vinificazione
Villa M's current production is based on aromatizing wine through family recipes.
The Vermouth di Torino Rosso is made from an old family formula incorporating 32 spices and botanicals. Identified components include Roman and gentle wormwood, rhubarb, cinnamon, nutmeg and sweet orange.
The Vermouth di Torino Rosso Superiore is a separate interpretation of the family recipe, assembled from 36 infusions. Its principal botanicals include Roman and gentle wormwood, vanilla, liquorice, coriander and sweet orange.
Barolo Chinato is produced by aromatizing Barolo with Calissaja cinchona bark and a mixture of spices. The family has preserved this recipe for twenty years.
Filosofia
Villa M is devoted to wine-based creations grounded in inherited family formulas. Its identity combines the preservation of old recipes with the preparation of vermouth through numerous botanical infusions and the continuation of the local Barolo Chinato aperitif-and-digestif tradition.
