Vineyard and terroir
The fruit comes from the “Viti di San Mor” vineyard on the banks of the Cozzuolo River.
Vinification
The grapes are harvested by hand in the second week of September. The must is vinified using a traditional sparkling-wine method.
Ageing
The wine rests for six months in the winery’s cellars.

Suitable as an aperitif and with delicate seafood dishes, particularly shellfish, as well as fresh vegetables and pasta with wild herbs and asparagus.
