Vineyard and terroir
The vines average 25 years of age and grow in clay soils layered with Eocene marl and sandstone.
Grapes
The origin of the Schioppettino name is uncertain. It may derive from the Friulian word “scopp,” referring either to the crunch of the ripe grapes’ thick, crisp skins when bitten or to the variety’s high acidity.
Vinification
The grapes are harvested by hand, destemmed and pressed. Pre-fermentation maceration lasts for up to two weeks. Fermentation takes place at a controlled temperature with gentle pumping over. The wine is then separated from the skins and pulp by gentle pressing to limit the extraction of bitter tannins from the fermented skins.
Ageing
The wine rests in tanks for several months, followed by around 12 months in barriques. After bottling, it remains in the winery’s cellars for an extended period before release.
