About this wine
Vineyard and terroir
The vineyards occupy the western slope of the Soave hill, north of the castle, on volcanic soils. The Garganega vines average 30–40 years of age, are pergola-trained and planted at a density of 3,300 vines per hectare. Yield is 120 quintals per hectare.
Grapes
100% Garganega.
Vinification
Approximately 40% of the grapes are picked in September and the resulting must is held cold. The remaining grapes are harvested during the first ten days of October after careful bunch selection, then macerated with their skins for 3–4 days on the chilled must. This is a contemporary interpretation of a 1930s technique, intended to give the wine greater freshness.
Ageing
The wine matures for nine months in concrete vats and a further six months in bottle.
Technical data
Alcohol: 12.25% vol. Total acidity: 5.35 g/L. pH: 3.3. Available format: 0.75 L.
Tasting profile
Intense straw yellow with golden nuances. The bouquet recalls peach, pear and apricot. The palate is soft and enveloping, with good persistence.
Serving and pairing
Its personality and complexity suit flavourful white meats and strongly flavoured fish dishes such as whipped salt cod.
Label / history
The wine's presentation recalls Bertani's historic Soave. The style revives a production technique used in the 1930s, while its association with the coronation luncheon of King George VI forms part of its identity.
