About this wine

Vineyard and terroir

The vineyards lie in Salento, Puglia, among olive groves. Their dry, deep soils contain clay, silica and limestone. Abundant sunshine is moderated by steady breezes from the nearby Mediterranean Sea, supporting refined, well-balanced fruit.

Vinification

The grapes were harvested exclusively in the early morning during the third week of autumn. Each variety was vinified separately in temperature-controlled stainless-steel tanks. Maceration lasted about two weeks, with daily remontage, followed by malolactic fermentation.

Ageing

The wine matured for 12 months in barriques of various ages, followed by six months in large barrels and a further six months in bottle.

Vintage notes

The 2007 growing season began with a cold, rainy autumn and a harsh winter. A mild spring and warm summer subsequently produced healthy grapes with high sugar levels.

Label / history

The name “Aiace” refers to Ajax the Great, the Greek hero traditionally associated with the Trojan War and renowned for strength, courage, beauty, restraint and self-control.
