About this wine

Vineyard and terroir

The fruit comes from the Case Vecie and Cavolo vineyards in Grezzano. Planted in 1994, the vines grow at 250–450 metres above sea level on east-facing sites, where the grapes ripen slowly and gradually.

Vinification

The grapes are harvested by hand in the second half of October and selected before the bunches undergo appassimento in a ventilated room. Drying takes place at a low temperature to preserve the grapes’ characteristics. During fermentation on the skins, délestage and remontage are performed daily to extract aroma and colour.

Ageing

The wine matures for two years in oak barriques, followed by one year in 25 hl oak casks.

Tasting profile

Elegant and velvety.

Serving and pairing

Pairs with meat dishes and mature cheeses.
