The return of viticulture to Favignana
Calamoni forms part of Firriato’s expansion beyond its original vineyards in the Trapani countryside into the contrasting environments of Etna and the Aegadian Islands. On Favignana, the project restored commercial vine-growing after a prolonged interruption described as lasting more than a century—and elsewhere as centuries. The resulting vineyard became the only one in production across the Aegadian Islands.
The project occupies approximately 5 hectares in Contrada Calamoni, on the central-southern side of Favignana. The vineyard was established close to the sea on the island’s narrow waist, beneath its high promontory and within continuous traditional dry-stone walls. It introduced a deliberately maritime form of viticulture based on Sicilian varieties and adaptation to an exposed, saline habitat.
2011: restoration and experimentation
In 2011, existing buildings at Calamoni underwent conservative restoration as part of a wider programme that also covered structures at Baglio Sorìa and Cavanera Etnea.
In the same year, a small portion of the Calamoni vineyard was converted into an experimental plot planted with ungrafted specimens of native varieties. The trial was designed to examine fundamental aspects of vine development in Favignana’s extreme habitat, including responses to water scarcity, pathogenic pressure and possible phylloxera attack. Initial observations indicated greater resistance to limited water, a more balanced crop load and better preservation of the fruit’s aromatic and sensory integrity.
Organic management and contemporary production
Calamoni shares Firriato’s estate-wide organic programme. The conversion of the company’s vineyards was completed by 2012 under BioAgriCert certification. The vineyard is managed without synthetic chemicals or fertilisers and with methods adapted specifically to its loose soil, marine exposure and ecologically sensitive island setting.
The estate’s grapes are vinified at Firriato’s Paceco facility, which handles fruit from both the Trapani estates and Favignana. Paceco is also the company’s principal maturation and bottling centre. Calamoni’s production is represented by the Favinia range, comprising three wines derived from the five varieties cultivated on the island.
Terroir
Location and maritime exposure
Calamoni lies at Contrada Calamoni on the central-southern side of Favignana, at the narrowest point of the island beneath its high promontory. The vineyard is only about 10 metres from the Calamoni cliff, and the sea is just a few metres from the vines. Continuous traditional dry-stone walls enclose approximately 5 hectares.
The site is completely exposed to air arriving from the sea, whether as a breeze or stronger gusts. The Favonio blows inland and counteracts humidity, helping maintain a dry, mild environment throughout the year. Together with the naturally thicker grape skins that develop in this habitat, the constant ventilation provides protection against parasites.
Marine aerosol and groundwater
Exceptional ventilation creates a marine-aerosol effect: fine seawater droplets are carried across the vineyard and deposited on the vines. The salt influences the grapes’ colour development and contributes saline and mineral components, while also producing slight burns on the leaves.
The roots grow in close contact with the water table. Rather than descending vertically, they spread horizontally, while the bio-calcarenite rock acts as a natural filter and drains saline water.
Geology and soils
Favignana is not volcanic. The island emerged during the Quaternary and is described as approximately 600,000 years old. Calamoni stands on a Quaternary limestone platform created beneath the Mediterranean over millions of years as shells, fish bones and other marine fossils accumulated and were compacted by pressure on the seabed.
The vineyard soils are loose and sandy, with Quaternary bio-calcarenite, abundant marine fossils, outcropping tuff-like rock and red sand. Their high limestone content is associated with a pronounced mineral and saline expression and with the capacity of the resulting wines to develop over time.
The surrounding ecosystem
Shallow sandy seabeds around Favignana support Posidonia meadows. Detached leaves accumulate along the coast, dry in the sun and are carried through the vineyard by the winds—particularly southern winds during storms. This marine vegetation is rich in potassium and participates directly in the site’s natural nutrient cycle. Seagull guano makes an additional, unintended contribution to soil fertility.
Winemaking
Organic and precision management
The vineyard is managed under Firriato’s certified-organic programme. Synthetic plant-protection chemicals and synthetic fertilisers are excluded, while interventions are timed to the vine’s natural cycle and adjusted to the conditions of each vineyard section. Dry farming, precision monitoring, natural soil cover and canopy management are central to the approach.
Soil and ground cover
Because Calamoni’s soil is naturally loose, it is not tilled. Spontaneous vegetation is allowed to develop, reducing erosion and mechanical input. Mulching is applied during the summer, and dried Posidonia leaves are distributed along the rows. Pruning wood is also reused within the wider self-sustaining vineyard cycle.
Natural fertility is supplemented by the island environment itself. Wind spreads potassium-rich Posidonia through the vineyard after storms, while seagulls contribute fertilising guano. These inputs are treated as components of the existing ecosystem rather than materials imposed from outside it.
Canopy and crop management
Plant work changes with the weather and each vine’s productive condition. It includes retaining leaf cover over bunches of selected varieties, shoot topping and crop thinning. The aim is to prevent excessive vine loading while bringing healthy, fully ripe grapes to harvest.
The dormant phase normally extends from late November to early March, followed by a vegetative and productive phase from late March through October. Each vintage is treated individually because the interaction among wind, salt, humidity, water availability and vine growth changes through the seasons.
Natural protection
Continuous airflow is the vineyard’s principal natural defence, limiting humidity and pathogen pressure while maintaining a dry, mild climate. The grapes’ comparatively thick skins provide additional protection. The ungrafted experimental plot supports continuing study of resilience to drought, disease and phylloxera in this unusual maritime habitat.
Calamoni’s grapes are processed at Firriato’s Paceco winery, which conducts all vinification for fruit from both the Trapani countryside and Favignana. Paceco is also the principal centre for maturation and bottling.
Winemaking is organised lot by lot rather than through a standard sequence. Destemming, pressing, punch-down work, transfers and maturation are interpreted according to the condition and identity of each parcel of fruit. Processing equipment, cold technology and vessel capacities are selected through protocols tailored to each incoming batch.
Control extends from grape reception to final labelling. The technical and cellar teams assess the raw material and direct each variety into its appropriate production path. Salvatore Di Gaetano supervises the work with winemakers Peppe Pellegrino and Giovanni Manzo. ISO 22005 and ISO 9001 systems provide traceability across the production chain, from the vineyard and its agronomic practices through bottling.
The winery applies low-environmental-impact technology and separates glass, paper, packaging and capsules for recycling. Water use, energy consumption and greenhouse-gas emissions are monitored within Firriato’s wider sustainability system.
Philosophy
Calamoni is conceived as maritime viticulture carried out within a fragile island ecosystem. The guiding principle is coexistence with the site: vineyard work follows natural seasonal rhythms and seeks to avoid invasive intervention.
The agronomic approach accepts wind, salt, spontaneous plants, Posidonia, birds and the shallow water table as active components of the vineyard rather than obstacles to be removed. No-till management, organic cultivation, natural ground cover and carefully adjusted canopy work are intended to protect the island’s ecological balance while allowing the fruit to express its origin.
The project is presented as heroic and extreme because it operates at the edge of the sea under unusual soil and climatic pressures. Its purpose is not to impose a fixed model on the vines but to respond to each vintage and each section of the vineyard, preserving varietal identity and the saline, mineral character associated with Favignana.
Within the family’s broader philosophy, environmental innovation and modern production technology must remain compatible with the protection of nature, landscape and territorial identity. The beauty and equilibrium of Favignana’s habitat are treated as values to be transmitted to future generations.
